My Mom's Schoo-Fly Pie

My Mom made the BEST Schoo-Fly Pie . . . Period!  It is one of my favorite pies even though most people have never heard of it.  I believe it has a Mennonite background, because the only place I ever see it is at food stands ran by the Amish or Mennonites.  It is one of those recipes that you are a little bit afraid that it is never going to come out okl



Here is the recipe from my Mom's collection.

Schoo-Fly Pie

Top of Pie:
1 Egg
1 C Sugar
1/2 C Butter
1 1/2 C Flour
1 tsp Soda
1/2 C Sour Milk (Milk w/ 1/2 tsp vinegar added)

Bottom of Pie:
1 Egg
1/2 C Brown Sugar
1/2 C Karol Syrup
1/2 C Cold Water
1 tsp Vanilla

1 unbaked pie crust

Preheat oven to 375°. Use a glass pie plate.
Combine ’Bottom of Pie’ ingredients and pour into an unbaked pie crust.
Combine ’Top of Pie’ ingredients, adding the Sour Milk last.
Drop by tablespoon on top of pie.
Bake at 375° for 10 minutes then lower oven temp to 350° and continue to bake for 30 - 35 minutes (in a glass pie plate). Pie may be a little jiggly in the center. Do not over bake.

I do find it interesting that my Mom made such good Mennonite meals, even though my Mom was not raised as a Mennonite.  Both my Mom and her twin sister were very religious women, even though religion was not an important part of their upbringing.  They did, however, come by their honesty, sweetness, hard-working and loving persona's by way of their Mother, my Grandma.  I really miss these three women!!!

what a great photo of you two. I love seeing pictures of Nelda. And I cannot wait to try that pie! It's funny to hear you say most people haven't heard of it. Never thought of it that way as I've always heard of it!! Love the photos too. Everytime I see them all I can think of is what a great backdrop they'd be for a photo session! Great work Madge
